Grilled Lemon Pepper Chicken

One of the challenges of going camping so many people talk to us about is what to eat. Most people wind up either eating hamburgers and hot dogs for three days straight or complaining that anything worth eating takes forever to prepare and leaves a huge mess to clean up, so we are going to start sharing with you some of our absolute favorite recipes that you can prep ahead of time and enjoy while you’re out camping, or ‘glamping’ for you classy people.

This recipe is one of our absolute favorites and winds up being made whether we’re home or at the campsite because it’s really that good.

This grilled lemon pepper chicken recipe is a perfect recipe to bring along with you on your next camping trip because all of the prep work can be done before you leave, and you can let the chicken marinate while you travel to your campsite. When you arrive, you’ll find some perfectly marinated chicken ready to grill and serve.

The light lemon flavor of this grilled chicken makes it perfect for a summer campfire cookout, or really any time you’re craving it, which may be often, so be forewarned!

Grilled Lemon Pepper Chicken

These lemon pepper grilled chicken pieces make a perfect summer camping dinner, or when you need a little summer camping flavor in your life any time of year.

Ingredients

  • 1 1/2 cups Italian salad dressing
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons lemon pepper seasoning
  • 1 chicken, cut into 8 pieces

Directions

  1. In a large Ziploc bag, combine all ingredients. Marinate for at least 8 hours or overnight.
  2. Preheat a grill over medium high heat. Add the chicken to the grill skin side down, reduce heat to medium low and cook until the skin is crispy and browned, about 10 minutes. Turn over and continue grilling until chicken reaches an internal temperature of 170F, about 15 minutes more.
